Grown and processed with meticulous care, this Bourbon Natural lot is bursting with complex, sweet flavours of Chocolate, Grapes, and Maple Syrup, perfectly rounded by a smooth, medium body. Origin & Farm Story: Finca Nazareth, Ahuachapán

This coffee is a genuine single-farm lot, sourced with full traceability from one of El Salvador's most celebrated coffee families.

  • The Farmer: This particular lot is cultivated by Mario Acosta, a dedicated fourth-generation coffee farmer from the illustrious Ariz-Herrera family. He is the proud owner of Finca Nazareth.

  • The Region: The farm sits high in the Ahuachapán region (part of the renowned Apaneca-Ilamatepec mountain range), which boasts ideal growing conditions: high elevation (up to 1,650 metres above sea level) and rich volcanic clay loam soil. This environment forces the Bourbon cherries to ripen slowly, concentrating their sugars and complexity.

  • The Varietal: This lot features Bourbon, a classic and highly prized Arabica varietal known for its clean, sweet, and complex flavour profile.

Farming Process: Natural Processing for Enhanced Fruitiness

While Finca Nazareth primarily uses a Washed process, this exceptional lot has undergone the rare and complex Natural Process, which is responsible for the deep grape and maple syrup notes.

  1. Selective Hand Harvesting: Only the ripest, highest-quality cherries are meticulously selected and hand-picked by the farm's experienced pickers.

  2. The Natural Process: Unlike the common washed method, the entire cherry, skin and pulp intact, is taken directly to the drying beds. The fruit remains on the bean, allowing the intense, sugary flavours of the cherry to infuse the seed over several weeks.

  3. Drying at Beneficio El Carmen: The cherries are processed at the nearby Beneficio El Carmen, a dry mill famous for its scrupulous attention to detail. The coffee is dried slowly on traditional clay patios or raised beds, where it is raked frequently to ensure a slow, even drying process that maximises the complex fruity notes.

  4. Quality: The resulting coffee is a Speciality Grade lot, celebrated for its unique clarity, rich sweetness, and clean finish—qualities that are difficult to achieve with the Natural process, demonstrating the Acosta family's expertise.

AeroPress - Medium-Fine: Use a quick, inverted method with a slightly lower temperature (around 90°C) to produce a full-bodied cup that highlights the deep chocolate base and rich sweetness.

About The Roastery

Mont58 Coffee is the passion project of husband-and-wife team, Shai and Maya. Their journey began quite literally at home in 2018, when they took the plunge and jacked in their full-time jobs to start roasting coffee in a humble garden shed in South-East London. Shai, whose passion for coffee was sparked by childhood memories of drinking cardamom-spiced coffee with his grandfather, honed his craft on a tiny 250g machine.

This small-batch venture quickly took off, especially during the lockdown when the local community wholeheartedly embraced their door-to-door, bike-delivered coffee.

While they have since scaled up to a larger roastery in Ashford, Kent, and opened further sites, the spirit of that original shed, small business, big heart, remains central to their award-winning, ethical, and community-focused mission. It's a proper 'started from the ground up' success story, but with significantly better beans.
